Slightly different to Western-style butchery, deboning a chicken Chinese-style completely removes all the bones giving large extended thigh fillets (including the meat from the drumsticks) and plenty of bones for stock. It's a very simple process that's done with just a single cleaver, and it's definitely a skill worth learning.
